Its important to know this high quality couverture chocolate is made with love in Brisbane, Australia. It's manufactured under very strict hygiene and food handling controls. Beware of cheap imitations that don't adhere to these best practices. Also cheaper chocolate is typically made with compound chocolate. Compound Chocolate is made from cocoa powder and oil. Usually cheap oils like cottonseed, palm kernel or soybean oil.
Our "Chocolate Gems" branded coverture chocolate follows the industry requirements to meet coverture chocolate standards. This means that in this chocolate, there will be a minimum of 32-39% of cocoa butter and not less than 2.5% of dry, non fat cocoa solids.
Couverture chocolate helps create a glossy texture and noticeable ‘snap’ when you bite into it. The high content of cocoa butter also brings out the intensity of flavour – giving it a richer, creamier taste.
Below are some helpful hints on the care of your chocolate.
1.Store the product in a cool, dry and ventilated room.
2.Keep away from strong light
3.Temperature - 14-22°C
4.Humidity - preferably less than 50%
5.Use air conditioning where possible and avoid fluctuations in temperature as these may cause condensation to the product.
6.Avoid dampness as the chocolate develops a sugar bloom when moisture collects on the surface of the chocolate.
7.Chocolate stored in overly warm conditions will show fat bloom, which is caused when stable cocoa butter crystals melt, reform as the unstable variety, and then transform back to larger crystals that appear on the surface.
8.Neither type of bloom renders the chocolate unusable. It just doesn't look as fresh.
9.Keep chocolate away from strong smelling goods such as soap, detergents, perfumes, onions etc and avoid direct sunlight.
10.If you need to refrigerate, place chocolates in an airtight container then wrap the container in a towel before placing in the fridge. When you wish to use the chocolate remove from fridge, leaving container wrapped in the towel, until it has warmed to room temperature. It will then be less likely that blooming will occur.
